Incompatibilities and failure points

与阳离子体系同用絮凝。与高浓度乙醇同用会析出糖类与多糖组分。与铁离子接触显色发暗。与强氧化剂同用变色。与碱剂局部高浓度接触会立即加深颜色,调 pH 时必须稀释后缓慢滴加。米发酵料通常含还原糖,与含氨基、胺基的原料(部分氨基酸、乙醇胺类中和剂、部分肽)在高温或长期储存下更容易走褐变路线,导致成品逐月变黄。

Stability

两个绕不开的现实:一是特征气味(米酒、酒粕味)明显,二是天然带微黄色。透明水剂里这两点几乎藏不住,配方设计必须提前取舍——要么接受并把它讲成产品特征,要么降低添加量并配合掩盖香与微量调色。高温加速黄变与气味加重;见光加深颜色;pH 向碱漂移会同时放大气味与色变。防护做法:加螯合剂、控制溶氧、用避光包材、pH 锁在 4.5–5.5,加速试验必须做满并每周记录颜色与气味。防腐余量要足。

Processing notes

后段加入,45℃ 以下为宜,加得越晚气味损失越小、颜色越浅。香精体系要围绕它来设计,不要先定香再加料——加完后再改香往往要推翻整支香。透明配方建议先做梯度稀释目视对照,确定客户能接受的色度上限并写进规格书。灌装前过滤。批次间颜色与气味差异较大,建议按色度分级并规定可接受范围;若客户对颜色要求严格,应与供应商锁定批次,或事先取得客户对微量调色方案的书面确认。大罐降温慢,加料点以实测温度为准而不是按时间表。
