Incompatibilities and failure points

与高浓度阳离子表活及阳离子调理剂(季铵盐类)同用,易与其中带负电的多糖与蛋白组分形成复合物,水剂里表现为丝状浑浊、絮状物或挂壁。强氧化性体系(高浓度过氧化物、部分过硫酸盐)会加速蛋白与核酸片段降解,颜色向深黄漂移。与乙醇含量超过约 20% 的体系同用有析出风险,必须先做澄清度小试。pH 低于 3.5 的强酸体系(高浓度果酸、纯维生素C水剂)下容易褐变并伴随气味加重。与钙、镁、铁等多价金属离子共存会交联起浑或异常增稠,用硬水配制时尤其明显。

Stability

耐热性差是它最突出的短板,长时间处于 60℃ 以上会明显褐变、气味变重,功能组分也随之损失,所以工艺上必须后段低温加入。见光会缓慢加深颜色,建议使用避光包材并配抗氧组分。遇氧与痕量金属会协同氧化,常规做法是配螯合剂(EDTA 类或植酸)并控制搅拌带入的空气。pH 向酸漂移会加重褐变与异味,向碱漂移到 7 以上则更利于微生物滋生。它本身是优质的微生物营养源,防腐余量必须比同类水剂留得更足,并做完整的防腐挑战试验。

Processing notes

乳化完成、料温降到 40℃ 以下(建议 35–38℃)再加入,禁止随油相或水相一起过热。加料前先用配方中的部分水相或多元醇稀释成预混液,在低速搅拌下缓慢加入,避免局部高浓度结块。搅拌以低速短时为准,过度剪切会把空气打进料体加速氧化。pH 调节应在它加入之前完成,避免加完后再用碱剂造成局部冲击。放大生产的典型坑:大罐从 80℃ 降到 40℃ 的时间远长于小试,若沿用小试的加料时间点,实际加料时料体仍在高温段,批次间颜色和气味差异往往由此而来,必须以罐内实测温度而非时间表为准。不同供应商的固含、颜色与特征气味差异大,换供应商必须重做稳定性与香精配伍。
