对金属离子敏感到近乎苛刻:微量铁、铜即生成深色络合物,料体从淡黄转褐甚至墨绿,这是最常见的翻车形式,而且往往在放大生产时才第一次出现。与蛋白、多肽、水解胶原、酶类络合沉淀,并把肽的活性一起拖下去。与阳离子调理剂配伍浑浊絮凝。与碳酸氢钠、氨甲基丙醇、三乙醇胺等碱性中和剂直接接触时,滴入点的局部高pH会造成瞬间不可逆变色,搅匀也回不来。与高浓度L-抗坏血酸同体系时二者互为竞争性氧化底物,文献上说得好听,实际常表现为整体黄变更快,必须以实测为准而不是照搬。与含氧化性成分的体系不可共用。

Stability

这是全库里最不稳的品类之一。水溶液在pH高于6时降解以小时计;遇氧发生自氧化并伴随明显黄变褐变;高温、光照、微量金属三者叠加会成倍加速。工程上几乎是必须的三件套:pH锁在4.0–5.0并用缓冲对稳住、螯合剂用足(EDTA二钠一类,约0.1%)、包材必须惰性——不透光、低透氧,优先安瓶、次抛或真空泵。配料时尽量减少顶空,有条件上氮气保护。去离子水也建议照加螯合剂。稳定性判定必须用含量法跟踪,不能只看外观,因为含量掉了一半外观可能还只是淡黄。

Processing notes

投料顺序是死规矩:先把体系pH调到目标值、螯合剂加完、温度降到35℃以下,最后才投EGCG,绝不能在中和碱液附近下料。粉体在室温或不超过40℃的水/丁二醇中溶解,溶解时避免长时间高速剪切带气。不锈钢锅体有点蚀、管道有锈迹先处理再开工,取样勺与过滤网建议用非金属或316以上材质。真正的放大生产坑不是配方而是等待时间:料体配好后在罐里过夜,第二天颜色就和昨天不一样,批间色差多半出在这里,所以SOP必须写死从溶解到灌装的时限,建议当班配当班灌完。留样的第一支要取自灌装线的最后一桶,而不是罐里的第一勺。
