Incompatibilities and failure points

1) 金属离子是头号杀手：与铁、铜接触立刻生成有色络合物，由黄转褐甚至发墨绿黑。金属来源不只是配方，还包括自来水、锅具锈斑、管路磨损、色粉与滑石粉中的铁杂质。2) pH 6.5 以上儿茶素氧化速率大幅上升，与三乙醇胺、氨甲基丙醇等碱化剂共处的局部高 pH 区就足以启动褐变。3) 与抗坏血酸类同用短期看着护色，实际两者互相消耗，中后期一起走，不要当成稳定方案。4) 与阳离子调理剂、水解蛋白与肽类同用，单宁结合会出浑浊或絮状，肽类活性也可能被拉低。5) 与过氧化物、含活性氯体系完全不相容。6) 与高含铁的天然矿物色料（部分土黄、氧化铁系）同配会整体发暗。

Stability

见光遇氧变褐是最典型表现——含儿茶素的水剂放置后变黄，第一顺位怀疑对象就是儿茶素氧化。温度是加速因子，80℃ 以上短时间即可见色，加速试验 45℃ 一个月往往就能看出成品寿命。

Processing notes

投料顺序有讲究：配料水先加螯合剂搅匀，再加提取物，不要反过来——先加提取物再补螯合剂，褐变往往已经发生且不可逆。粉末规格先用去离子水或丁二醇溶开再入锅。加热上限建议 50℃，实际操作放在降温到 40–45℃ 的后段加，绝不与高温保温段同行。锅具与管路开工前确认无锈斑，铜质配件禁用。放大生产的坑：大锅顶空与循环时间比小样长，带氧量高，颜色批差比小样明显，建议每批留色板并规定色差判定范围；同时与香精同用时褐变会改变顶调感受，香精定型样要用放大批做。给客户打样时同时给「当天样」和「45℃/1 个月样」看色，把预期先讲在前面，比事后解释省事得多。

主要成分是以 EGCG 为代表的儿茶素类多酚，另含咖啡因与少量氨基酸。配方里主要放在抗氧化方向，作为体系自身的自由基清除与协同护色成分，也常出现在油皮清爽线和舒缓线。需要注意它既是活性物也是体系里最活跃的还原性物质，会主动参与配方内的氧化还原反应，因此更常被当成需要被保护的对象来设计。
