Incompatibilities and failure points

含较多蛋白与核酸类组分,对热、强氧化剂和极端 pH 比滤液型更敏感。与阳离子体系的絮凝风险高于滤液型。与高浓度乙醇同用析出风险更大。与强还原剂或含硫醇原料同用会加重气味。pH 低于 3.5 长期储存易褐变并伴异味。与多价金属离子共存会交联起浑。含蛋白酶活性的其它原料(部分果蔬酶提取物)会降解其中的肽组分,应避免同配方直接叠加。

Stability

比滤液型更热敏、更易褐变,储存期气味加重也更明显。见光加深颜色。它是最优质的微生物营养源之一,防腐挑战必须做完整版,不能只做缩水版。常见防护:后段低温加入、加螯合剂、控制溶氧、避光包材、pH 锁在 4.5–5.5,加速试验做满并逐周记录颜色与气味变化。

Processing notes

40℃ 以下加入,是配方里最后加的一档;先预稀释再缓慢入罐,低速短时搅拌。客户最常见的一轮来回是把它与 Lactobacillus Ferment(滤液/发酵产物型)按单价直接对比,得出「贵一倍」的结论。要提前讲清三点差异:一是工艺不同,溶胞型多一道破壁与后处理,得率与成本结构不同;二是固含与组分谱不同,不能按等重量替换,换用必须重做稳定性、气味与防腐挑战;三是热敏性不同,溶胞型对投料温度要求更严,产线加料点要改。把这三点写进报价附页,通常能直接省掉一轮往返。不同供应商的溶胞程度与过滤精度差异大,来料应规定固含范围与浊度上限。

What it addresses

与乳酸杆菌发酵产物同源但工艺不同:发酵结束后不只取滤液或上清,而是把菌体破壁(溶胞),让胞内蛋白、肽、核酸片段与细胞壁碎片一并进入产品。相对滤液型,组分谱更复杂、固含通常更高,配方里常用于屏障与舒缓方向,也用来支撑更强的后生元叙事。
