Incompatibilities and failure points

1)皂苷带起泡性与表面活性,在高油相或 W/O 体系里会削弱乳化稳定性,放置后可能微量析油。2)与阳离子聚合物形成复合物,导致浑浊或粘度下降。3)伴生多酚与多糖遇铁离子变色。4)高浓度电解质下溶解度下降。5)必须区分「三七提取物」与「三七粉」:后者是未提取的粉体,含大量不溶物,直接进面部免洗产品会有明显颗粒感,且微生物负载与提取物完全不是一个量级,不能按同一套工艺处理。

Stability

浅黄至黄棕色,遇氧与 pH 升高时缓慢加深;高温长时间保温可能引起皂苷转化,外在表现是颜色与气味同时变化。含糖类的规格微生物风险偏高。常见防护做法:pH 控在 4.5–6.0、配螯合剂、降温后加、防腐单独做挑战测试,并要求供应商提供特征皂苷(如 R1)的含量数据,用于判断批间一致性——只看外观和总固含判断不了这一点。

与人参共线生产时必须用不同物料代码、不同货位、不同标签颜色。两者粉体外观几乎一样,拿错在成品上看不出来,只有客户送检时才暴露,属于会直接赔货的事故类型。溶解同样起泡,低转速加抽真空,乳化降温后再加。客户要求「人参三七复配」时,先确认标示物合计怎么算,合同里写清各自投料量而不是只写一个总量,否则后续检测口径会打架。粉状规格先用多元醇预分散。

与人参同属不同种,成分谱并不通用:三七以三七皂苷 R1 与 Rb1/Rg1 的特定组合为特征,人参则是 Rg1/Re/Rb1 的另一种比例结构,标示物和检测方法都不一样。配方中常用于舒缓与泛红方向的复配。采购最常犯的错是把两者当同一物料互换报价或互换送样,结果客户送检时对不上标示物——库里把这一点写清楚,就是为了拦住这个错。
