1)花青素在中性偏碱条件下开环褪色并转黄,体系 pH 高于 6 就不要指望留住紫调;2)与铁、铜等金属离子络合变暗,含矿物色素或铁质植提的配方要加螯合剂;3)与高浓度还原剂(亚硫酸盐、抗坏血酸高加量)共处会加速褪色;4)与阳离子调理剂配伍时先小试,酚类与季铵盐可能出现浑浊。
稳定性
对光、热、氧与 pH 都敏感,是典型的「配方里好看、货架上变色」原料。防护做法:低温避光贮存,成品避免透明包材长期上架;体系里配 EDTA 类螯合剂与抗氧化剂;加料温度控制在 45℃ 以下。留样必须做光照与 40℃ 加速,颜色是第一观察项。
工厂投料要点
后加料,乳化降温到 45℃ 以下再投。粉体规格先用少量水或甘油预分散,直接撒进乳化体会结团。颜色批次差异明显,量产前要和客户约定色差范围,并留标准色板;不要用「和上一批一模一样」这种承诺,天然花青素做不到。
