Incompatibilities and failure points

含乳酸,会拉低体系 pH,与不耐酸活性同用先测终点 pH。与阳离子体系同用可能絮凝。与高浓度电解质叠加会削弱卡波类体系的粘度。与强氧化剂同用会加速变色与气味变化。与含还原糖较高的其它发酵料叠加时,高温下更容易褐变。pH 高于 7.5 的碱性体系下气味变化明显并可能变色。

Stability

对常规工艺的耐受性中等,但仍怕长时间高温与强剪切带来的气味变化。见光影响中等,遇氧与金属离子会推动黄变。实际风险主要来自两处:一是它本身是营养源,防腐余量必须留足并做完整挑战;二是沟通口径——客户若按活菌理解,会追问活菌数与储存活性,而交付的是灭活体系,必须在规格书与沟通材料里写清「非活菌、无需冷链」,避免上市后被质疑。

Processing notes

建议 45℃ 以下后段加入,先预稀释再入罐。加入后复测 pH 并按需回调,不要凭上批经验直接定中和量——不同批次乳酸含量差异会改变终点 pH。若同一配方里还有二裂酵母溶胞物等更热敏的发酵料,把最热敏的排在最后加。规格书要单独写明三件事:非活菌属性、来料是否自带防腐、培养基是否涉及乳源或大豆源等潜在过敏原,这三项客户几乎必问,提前写好能省一轮往返。

乳酸杆菌在特定培养基上发酵后得到的产物,含有机酸(以乳酸为主)、短肽、氨基酸与菌体代谢产物。它是后生元叙事的入口原料。需要向客户讲清楚的是:化妆品里用的是发酵代谢物与灭活菌体成分,不是活菌;后生元不等于益生菌,成品也不应按含活菌来沟通。
