Incompatibilities and failure points
与单宁类植提络合起絮、与高浓度阴离子表活形成复合物、高电解质与高乙醇析出,这三条与其它水解蛋白一致。真正的替换陷阱在 pH:豌豆蛋白的等电点区间与大豆、小麦不完全一样,直接沿用原配方的 pH 设定,常会在 pH 4.0–4.5 附近出现浊度上升甚至微沉,所以换料之后必须重新扫一遍 pH 曲线,而不是只把料换掉、pH 照旧。与阳离子聚合物的相容比例也要重新标定,不能沿用小麦蛋白的窗口。
Stability
微生物营养源,防腐必须足量并做挑战测试。加热黄变与 pH 极端下继续水解的规律同其它水解蛋白,建议控制在 80℃ 以下。豌豆来源带轻微豆青气味,从小麦蛋白替换过来之后,原有的香精可能需要微调,这一步经常被漏掉,导致客户觉得「香味变了」。冻融后需单列观察浊度。
Processing notes
替换小麦蛋白时最常见的客户反馈是「肤感或发感变了」:豌豆蛋白的成膜更轻、紧绷感更弱,洗护线里的梳理性下降尤其明显。正确做法不是 1:1 等量替换,而是要么提高用量,要么补一个阳离子调理组分把手感补回来,并且在打样单上事先写明会有差异,让品牌方带着预期评估,而不是收到样品之后才发现。无麸质是这一支的主要卖点,但仍要向供应商确认产线共线情况并索取检测文件,不能仅凭原料名下结论。投料方式与其它水解蛋白相同:冷却到 45℃ 以下加入,先用配方水稀释 5–10 倍再入锅,控制泡沫,称量后冲洗容器残留。
