高醇体系中多糖易析出白色絮状物,析出阈值随规格与分子量差异很大,高醇爽肤水必须先做梯度稀释预试或另选耐醇规格,不要按某个固定醇度判断。

Stability

多糖在低 pH 加高温条件下缓慢水解,表现为货架期粘度下降,而且第一个月降得最明显——「客户收到的货比留样稀」多半是这个原因。含糖体系是微生物的良好营养源,防腐必须单独挑战。冻融时可能相分离。常见防护做法:体系 pH 不低于 4.5、避免 80℃ 以上长时间保温、粘度考察必做 45℃/1 个月与三次冻融循环,并把初始粘度做在规格中值偏上而不是压在下限。

Processing notes

加料方式直接决定手感,必须先定目标再定加料点。与水相同煮:多糖充分水化,体系更稠、更「厚」,但高温保温时间长会损失粘度、颜色也会加深;降温到 45℃ 以下后加:粘度贡献小、肤感更清爽,但可能残留未完全水化的颗粒感。这个加料点一旦确定就写死在工艺卡上,不允许现场随意调整,否则同一配方会做出两种手感。粉体必须先用甘油或多元醇预分散,直接入水会结「鱼眼」团,团块在成品里表现为透明颗粒,过筛也去不掉。放大生产时大锅水化更慢,首批按小样粘度上浮 10–15% 预留调整空间。
