核心坑是自带盐分。海藻类提取物天然含钠、钾、钙、镁等电解质,加入卡波姆或丙烯酸酯类中和体系后会屏蔽羧基电荷,凝胶明显变稀甚至化水,这正是客户说的加了就变稀最常见的元凶;要么改用耐电解质增稠剂(黄原胶、丙烯酰基二甲基牛磺酸铵类共聚物),要么选脱盐型号。其中的钙离子还会与藻酸盐、果胶、低甲氧基果胶、卡拉胶交联,叠加时可能出现颗粒、局部结块或胶皮。阴离子性质使其与阳离子聚合物、阳离子表活配伍容易絮凝沉淀。部分批次带明显海藻腥味,低用量花香型香精盖不住,会在成品放置后返味。

Stability

水溶液见光遇氧容易加深颜色(黄褐向深褐漂移),内含酚类与色素对氧化敏感,建议避光包装并配合螯合剂。长时间高温加热会降解多糖、削弱成膜感并加速色变。pH 低于 4 时藻酸类成分容易析出成絮。天然盐分与有机物含量高,微生物负荷是重点风险,来料必须看菌检,配方要留足防腐余量;含较高比例多元醇或乙醇的提取物形态相对稳定。碘与重金属含量随产地与采收季波动,需要每批核对 COA。

Processing notes

属于典型的后加原料,建议乳化或增稠完成、体系降温到 40 ℃ 以下再细流加入,避免长时间受热变色。拿到新批次先做电解质预判:测电导率,或直接做提取物加目标增稠剂的小试黏度对照,再决定增稠体系和用量,不要等主锅做完才发现变稀。若客户坚持卡波体系,把提取物拆分加入或改用耐盐增稠剂,并重新配平中和剂用量。带腥味的批次可先与香精、掩味剂在小锅预混再并入。放大生产中颜色批差比黏度批差更容易被客户投诉,建议保留标准色板做每批比对,并在规格书上写明色泽范围。
