Incompatibilities and failure points

含酚类与异黄酮类组分,与铁、铜离子接触会显色变深,严重时呈灰绿,必须配螯合剂。与强氧化剂、高浓度过氧化物同用会褪色或异常变色。与阳离子体系同用可能絮凝。与高浓度阴离子表活在清洁类配方里可能出现浑浊或沉降,做洗类前必须单独试配。pH 高于 8 的碱性体系下颜色加深、豆腥气味回归。与高浓度乙醇同用需先测溶解极限。

Stability

见光与遇氧都会推动颜色向深黄、深棕漂移,透明包材里最直观。高温大幅加速变色。pH 向碱漂移会同时带来变色与气味回升。常见防护做法:pH 控制在偏酸区间、加螯合剂、配水溶性抗氧组分、选避光包材、控制乳化搅拌带入的空气。发酵料营养丰富,防腐挑战必须做完整版,不能沿用同厂其它配方的防腐方案。

Processing notes

后段加入,建议料温 40–45℃ 以下。粉体形态必须先在水或多元醇中完全溶解、静置排净气泡再入罐,直接撒入会结团且后续搅不开。液体形态要留意来料颜色的批次差异,深色批次会把整体料体拉黄,浅色或透明配方需要按颜色分级采购并在规格里写明色度上限。大豆来源要在过敏原沟通上主动留一句:虽然是提取物、蛋白残留通常极低,但下游品牌方在标注与消费者沟通上可能需要声明大豆来源,建议在规格书中明确原料来源并向供应商索取残留蛋白检测与来源说明。若下游市场关注转基因议题,应提前取得大豆原料来源文件。
