Incompatibilities and failure points
与单宁类植提仍会络合起浊,程度通常比大豆蛋白略轻,但不能当作没有,依然要做小样。高电解质与高浓度乙醇会析出。与过氧化物、过硫酸盐类强氧化体系同用会降解并产生异味。值得单独记一笔的是,相较其它植物蛋白,它与阳离子调理体系(聚季铵盐-7、聚季铵盐-10、瓜尔胶羟丙基三甲基氯化铵)的相容窗口更宽,不容易起絮,这在二合一洗护和护发素类产品里有实际价值;但这是相对优势不是免检理由,具体比例仍要在实际体系里验证。
Stability
微生物营养源,防腐必须足量并做挑战测试。加热黄变、pH 极端下继续水解的规律与其它水解蛋白一致。这一支的批间色泽波动相对明显,尤其在浅色透明体系里容易暴露,来料检验建议直接加验色度,并要求供应商提供近几批的色度数据做趋势判断,而不是只看单批 COA。冻融后需单列观察。
Processing notes
压成本方案的正确做法是玉米蛋白打底承担主要用量,再用少量米蛋白或豌豆蛋白做手感修饰与成分表叙事,而不是把单一便宜蛋白顶满用量,后者成本省不了多少,感官却明显变差。注意市面上不少商品化牌号是玉米蛋白与其它蛋白的复配液,报价单与规格书必须写清实际固含与组成,否则客户会拿复配液的价格去和纯蛋白比价,谈判会很被动。投料方式与其它水解蛋白相同:冷却到 45℃ 以下加入,先稀释再入锅,控制泡沫。若客户要求非转基因来源,开单前先向供应商确认能否出具文件,不要打完样再回头补。

玉米蛋白(以醇溶蛋白为主)水解后的多肽混合物,氨基酸组成中疏水性残基比例较高,成膜后的手感偏干爽而不是偏黏,是植物蛋白里成本最友好的一档。多用于需要压成本的洗护与基础护肤方案,也常与米蛋白、豌豆蛋白少量复配,用来在控制成本的同时把手感和叙事拉平。
