Incompatibilities and failure points
1)抗坏血酸在中性 pH 与金属离子存在下迅速氧化变黄,体系必须偏酸并加螯合剂;2)与铜、铁离子、以及含这些离子的植提共处会加速变色;3)与烟酰胺在低 pH 高温下的相互作用需实测,不要凭理论直接下结论;4)单宁与蛋白类原料同处可能浑浊。
Stability
这是全库里最不耐放的一类之一:光、热、氧、金属离子、高 pH 五个因素都会让它变黄。必须做光照与加速稳定性,颜色与气味是第一观察项;成品建议避光不透明包材。
Processing notes
后加料,降温到 40℃ 以下投;水相先脱氧或配抗氧体系。变黄是这一味最常见的客诉,打样阶段就要把加速数据给客户看,并在货架期与包材上给出明确建议 —— 而不是等到量产后再解释。
What it addresses
桃金娘科卡姆果的果实提取物,天然抗坏血酸含量在水果里属最高一档,并含花青素与鞣花单宁。配方上不要把它当作维 C 功效原料的替代 —— 天然抗坏血酸在水相里同样不稳定,它更适合作为植物来源的抗氧与感官叙事组分,真要做稳定的维 C 体系仍用衍生物。
