pH是第一杀手:pH小于3偏红,3–5由红转粉紫,6–7转紫至蓝,大于7转蓝绿并很快褪成黄褐。任何会推高pH的原料——氨甲基丙醇、三乙醇胺、氢氧化钠、碱性皂基、高pH的烟酰胺水溶液、部分碱性防腐体系——都会直接改变成品颜色,这不是稳定性问题而是配方设计问题。与铝、铁离子形成蓝紫色络合物,颜色跑偏且批间不可复现。与亚硫酸盐类抗氧化剂发生加成褪色,等于把颜色直接洗掉,所以这类配方不能用亚硫酸盐做抗氧。与高浓度抗坏血酸共存时二者相互加速降解,颜色掉得比各自单放还快。视规格中的单宁背景,与阳离子调理剂、蛋白类同样有络合浑浊风险。

Stability

三大杀手是光、氧、pH漂移,其次是温度。透明包装在货架灯下一两个月就能看出明显褪色。工程上必须用缓冲体系(柠檬酸/柠檬酸钠或乳酸/乳酸钠)把pH锁死在3.2–4.2,而不是只调一次pH——没有缓冲的体系pH会随时间上漂,颜色跟着一起走。配合避光包材、螯合剂防金属变色、避免亚硫酸盐。如果客户既要浅色又要稳定,更现实的方案是低添加加外用耐光色素,把活性和颜色两件事拆开做,这个取舍必须在打样前谈,不能等三个月留样出来再谈。

Processing notes

提取液或粉体先在冷水或水-丁二醇中溶解,全程不超过40℃,禁止跟水相一起加热。属后加料,乳化降温到35–40℃再投。pH的主体调节必须在加入花青素之前完成,加入之后只做微调,而且要用稀酸稀碱缓慢滴加、边加边搅——浓碱滴进去的一瞬间会出现蓝斑,搅匀之后颜色也回不到原样,这种批只能报废。灌装线上避免长时间明场停留。放大生产的坑在pH复测点:小样调完就灌了,大生产从调pH到灌装可能隔六到二十四小时,pH会漂、颜色会跟着变,SOP必须写明灌装前复测pH并与标准色卡比对,不合格先回调再灌。留样要留在与成品同款的包材里,用透明瓶留样得出的结论对不透明成品没有参考价值。

What it addresses

主要活性为花青素类(矢车菊素、飞燕草素等苷元的糖苷)与有机酸,在配方中作为水相多酚抗氧化组分,同时天然带色,常被用作不加合成色素也有颜色的卖点。但这份颜色本身就是它最大的配方风险:花青素是天然的pH指示剂,配方的颜色管理难度远高于活性管理。
